Looking to change up your breakfast routine? Perhaps indulge in something delicious? Craving some breakfast classics from your childhood? Want something filling and warm to sustain you on a cool weekend morning? Give these pancakes a try. They are simple, quick and healthy.
INGREDIENTS
- 1 large ripe banana
- 2 eggs
- ¼ teaspoon baking powder
- ¼ teaspoon cinnamon
INSTRUCTIONS
1. Mash the banana by hand, then add eggs, baking powder, and cinnamon to a bowl and mix well. You can also use a blender if you wish. Transfer mixture to a measuring cup with a spout for easy pouring.
2. Heat a large tab of butter on a griddle or skillet over medium-high heat. Pour batter as you would for normal pancakes, flipping halfway when slightly browned, approximately 4 minutes on each side.
TOPPINGS
These are great as they are or jazz them up with some nut butter, fresh fruit, pure maple syrup or coconut whipped cream (see recipe below).
COCONUT WHIPPED CREAM
This is so simple. Only requires 1 ingredient. Just open a can of coconut milk. Use a hand mixer, standing mixer or even a whisk and bowl. Whip until it’s fluffy.
